Since the sun has been shining for the past few days I thought I would get into the spirit and I came up with this recipe, Summer Chicken. Its perfect for BBQs, lunches, simple cooking, quick bites and budget buying. It gives you the perfect taste of summer everytime! Definately worth a try, even for the beginner in the kitchen. Serves two.
Heat the oil in a shallow pan and add the chicken. Once coloured turn over and allow to cook through. When almost cooked through add the tomatoes and pine nuts and leave on the heat for around 4-5 minutes. The tomatoes should have softened. Add the pesto and creme fraishe and stir all together. Add the final pinch of salt and pepper to season if neccessary. Serve with rice or new potatoes for an even more summery taste.
